Ramos Gin Fizz

I’d pasteurized a few eggs about 2 weeks ago, with my Anova sous vide cooker, specifically for use in cocktails - but hadn’t used them yet. I’ve been wanting to make one of these cocktails for a while - they seem so decadent. I’ve had them in bars a few times, but never made one.

I had all the ingredients at hand, even the orange flower water! So I went for it. And glad I did! It came out really well, and the dry shake didn’t even leak (I usually do a reverse dry shake because they’re less prone to leakage from the shaker).

Ramos Gin Fizz

* 2 oz/60 ml London Dry Gin (Bombay Sapphire used)
* 3/4 oz/22 ml simple syrup
* 1/2 oz/15 ml fresh lemon juice
* 1/2 oz/15 ml fresh lime juice
* 1/2 oz/15 ml heavy cream
* 1 egg white
* 3 dashes orange flower water
* Club soda

Combine gin, citrus, syrup, cream, egg white in a shaker. Dry shake (I.e. no ice) for about 20 seconds. Add ice to shaker and shake hard for about 30 seconds. Strain into a chilled, straight-sided glass (like a Collins glass). Top with club soda.
Serve.

First attempt at making a Masala simple syrup has been decent.
I do think it needs quite a bit more ginger (perhaps I should grate some instead of slicing it), and get some better cinnamon sticks. Should also look into if there is much of a difference between using cardamom pods, or just the dried seeds from them (which I used).
Definitely need to up the spice to water ratio too, or let it infuse for longer.
Using muscovado along with regular sugar gives an interesting extra depth, but may also have made it too sweet. (Though amping up the spices in general might help with that too, as I would need to add less of the to my freshly brewed .)

My preferred beverage in the evening is a cocktail, many of which call for simple syrup. I make a rich simple syrup from muscovado sugar. Muscovado sugar is a like brown sugar but much richer with molasses flavor and goes well with rum-based drinks.

For cocktails that require a lighter syrup, I make a syrup from white cane sugar. I also make a honey simple syrup (for a Bees Knees) and maple syrup simple syrup (for a Maple Old Fashioned)

It's the cheapest I could find a year or so ago. The plastic bottle is a quality indicator. Just using it to make sugar syrup. Unfortunately I found out if you make without it, it grows mould pretty quick, even in the fridge.

Doing about 1:1 sugar-boiling water seems to work okay. Not sure what the mixology wisdom is on the preferred ratio.
