Just finished smoking some homemade bacon.
This is my first time hot smoking bacon with real smoke (I have a pellet tube that I can put on the grill). Over the winter I started hot smoking in the oven (I only did it cold before) with liquid smoke, so this is a step up for me.
Hopefully it turns out well. I hear a lot of people say they like hot smoked bacon better than cold. So we'll see.

Things I bought in Montreal because I missed them - huge pile of smoked meat to share with family and two bags of St-Viateur bagels to bring back home. Both were/are as good as I remember.
So, that first photo was not entirely representative of the ingredients with which I started. In the end, I added 3T of salt, about 10 slices of dried lime, 4 cloves of garlic, 1T of chilli flakes, and a very generous handful of fresh thyme. I added one (1) whole organic chook, and ~3 litres of water, put a lid in place, then fridged it for ~36 hours.
I strained the brine to keep the fruit and veg elements, then buttered a heel of bread, and roughly chopped the lot to make a crude stuffing.
I generously coated the chook with a herb & spice mix I made a month or so ago (ingredients in next post) and put it back in the fridge.

The beef spare ribs have just come out of the sous vide after 26 hours. Now to smoke them for about 30 minutes. OMG, they smell so good already.

Start > Finish (and bonus side view). Turned to pulled pork, shredded by hand. No fork, no claws, super tender.
Smoked all day over hickory, apple, and Kingsford charcoal to 175 on my Chagriller offset. Finished in the oven at 275 to 203 because it got dark and cold. #barbecue #SmokedMeat #PulledPork

3.5 hours now (I flipped it over after 2.5 hours). Gave it a really good baste with the leftover marinade, and shut the lid.
Update: 2.5 hours down. 2.5 hours to go.
