@JRRM So much depends on your individual feet! Don’t let people tell you there’s **One True Way** to knit a sock; you should try lots of heel/toe styles and see what options fit you well as-is and what tweaks work for you for adjusting others.
The heel that fits me best is: https://www.periwinkledragon.ca/chinstrap-heel-socks (see photo) but it’s not the only one I use. I like a toe where you increase/decrease 2 out of every 3 rounds.
