Got another batch of rolls in.
These are ... both rewarding and frustrating.
Rewarding as rolls are somewhat simpler than a full loaf. Frustrating because getting a nicely-risen-yet-well-browned bake is ... challenging.
I've been experimenting with baking rolls within a cast-iron skillet, inside a dutch oven, and with various forms of tent or cover over the skillet.
This bake:
Rolls are about 115g each, arranged in a 10" skillet.
No cover, but added a tray w/ water to the bottom of the oven.
Heavily spray rolls with water. They're also well-dusted with flour, and cornmeal on the skillet bottom. Tops scored w/ single slash.
Bake at 230C / 450F.
Pull the tray and let out the steam at 10 minutes.
The rolls seem to have entirely merged together. Scores are utterly nonvisible.
Giving another 25 minutes (to doneness) at same temp.
It'll be interesting to see how these actually emerge and/or separate after the bake.
Normally I do a three-day sourdough, but today I'm trying a two-day because I forgot to make the levain last night. This is actually making me nervous. #sourdoughlife
Signal I'm traveling soon: started bread. This levain is 11% rye (360g water, 320g flour, 40g rye, 220g starter) #sourdoughlife #recipe?
Sourdough, just 4 ingredients a bunch of fungae, but a thing of beauty.
Bread's in.
This is a 100% whole wheat loaf, with 150g walnuts added to 1000g flour.
Hydration is 90%, as it seems that WW soaks up even more liquid than white flour. I could have upped that and will try a 100% hydration next time, possibly even more.
Playing with oven settings as well. Turned convection on for pre-heat to evenly heat both oven and thermal mass (Dutch Oven + a cast-iron skillet). Turned conv off for the bake itself, then back on after dropping temp for browning.
Bake at 550 F (290C) for 20 min, brown at 450 F (230 C) for 25 min / until desired browning observed.
