I've made an animation of myself working the dough into a pizza bottom.
The crust was still a bit too dense. Maybe I should use a notch more hydration. This dough was 63% hydrated.
The dough was easy to handle though.
Tonight we had pizza! \o/
Spelt dough with whole-spelt poolish. 30hr cooled rise in the fridge, 2hr rise at 20°C.
