Working on collard greens made with bone broth & caramelized onion& garlic, baked butternut squash lightly roasted w/ olive oil, & grilled chicken breasts for lunches (& who knows—snacks? Breakfasts?) for this week & some to freeze. Cooking collard greens properly takes quite a bit of prep time, but it’s totally worth it. @shuffard Well I had no idea #CaseyJones was a real person! What an interesting combination of scholarship. My husband is a model railroader, but although Southern theme, this new model he's making is based on South India. :)
