Foodie pro-tip for anyone who wants "soy sauce" but is allergic to soy, has problems with gluten, or can't have lots of histamine:
"Coconut aminos" are a near-perfect drop-in replacement for sushi and recipes.
(Just make sure you're not also allergic to coconuts.)

Recently been down a rabbit's hole learning about how deep the waters are re: #SoySauce in #Taiwan and it's been fascinating.
Terminology! Soy sauce made with black beans (apparently the traditional method going back to way back when) is called something different than the stuff made from soybeans and what.
I'd tell y'all which is which but I haven't sorted it out yet myself.
Methods! Some companies buy "bean juice" and then process. Some go from bean to sauce. This matters for pricing.

Leftover veggie lo-mein with Momofuko soy sauce. Let me tell you this sauce is rich and delicious. And their chili crunch is good too. Nice flavor of shallots at the end. I could probably eat spicier, but then again, I grew up eating raw green chilies (and still do, except for some LETHAL ones I accidentally grew in the garden.)
I have no connection to Momofuku. Just sharing. Because yum.

13 months ago, I started making 4 gallons of soy sauce. This required mixing 1 Kitchen-Full of soybeans and wheat with the mold spores of Aspergillus Oryzae, adding salt and water, and stirring regularly. Today I tasted it for the first time, and it’s fantastic. Fruity, funky, savory.
If you’re in Portland and want a taste (and are willing to show some courage in the face of a small but nonzero chance of botulism), I have enough to share.
