There are quite a few tools which I don't really use in my kitchen in Pittsburgh (though I have some).

I'll start with the seel or sil noda (flat grinding stone). Used for everything from grinding dry spices to wet cooked foods - such as these squash leaves (boiled with salt)

Oh you're still wondering how that mustard paste is made on the stone? Just wet and ground with a back and forth motion.
