Sweet Potato pie with Meringue

Had doubts, and it failed to prove me wrong. The filling is too dense for the meringue, and the meringue cuts the flavor too much. And that flavor is what we all want from our sweet potato pie.

I ❤️ too much to bother fixing the problems with this version.

I am making a recipe from Freda DeKnight's "Date with a Dish" Cookbook (aka THE African American cookbook Back in the Day, and from the 1st Print from 1948, no less) . The sweet potato I'm worried wasn't soft enough when I mashed, and the instructions didnt rely on exact temperatures, but I'm excited to see the results!!

When my daughter found out I wasn't planning to make my sweet potato pie this year, she sent me this GIF. (Dramatic much?!)

So, while she was at work last night, I ran to the store. Two pies are currently in the oven, and should be cooled and ready by the time she wakes.
