Thinking about it as I drink this AM, the 2021 Pinglin Natural Farming Shui Xian "Water Dragon" from Yunnan/Taiwan Sourcing really brews more like a Dancong Oolong than a typical Taiwanese Oolong.

2021 Pinglin Natural Farming Shui Xian "Water Dragon" from Taiwan/Yunnan Sourcing. This is a really interesting tea. Every steep shows a different character; sometimes fragrant, sometimes spicy, sometimes a little bitter, sometimes a little astringent. A little "naughty". For a Taiwan Oolong, it also has a surprising ability to continue steeping many times. I would be super interested to see how this tea aged.
