A sign we are getting to the end of the maple run. The syrup in these jars are from the same trees boiled to the same temperature (7.5 degrees over boiling point. For our elevation 218.5). The dark syrup on the right was made yesterday. The light syrup on the left was about 3 weeks ago. I love the deeper flavor of the dark syrup.
