Ah okay - never posted finished giant #calamari dish. Stuffed with sourdough, garlic, onion, fresh oregano, lemon zest, anchovy, ev olive oil. Slow roasted in tomato and a very rich chicken stock under cartouche. Tender as. Rich as.
