last #tempeh decision is either to order a fancy 50 euro thermometer controlled power source to turn on and off the light bulb or to try and DIY it. I dont have a good source for those kinds of mains electrical parts here, and maybe i feel slightly more comfortable with an all in one solution for fire risk reasons. already got a line on a perfect styrofoam cooler for the box though!

Tempeh Katsu-don.
I decided to try #tempeh because in a manga I read recently, a little girl couldn’t tell a difference between pork and tempeh when she demanded to eat Katsu-don in a post-apocalyptic city and got served with one, which turned out to be made of tempeh instead of pork.
It made me curious, and today I finally did it.
Tastewise, it’s surprisingly good. The Umami of tempeh was on par with that of pork.
No, it’s not pork, but the flavor might be better than pork.
I love it.

Recipe:
Deep fry thinly sliced #tempeh, season with salt. Done.
It was easy, tasty and filling snack.
Good on salad, too.

Brewing supply shops sell grain mills, and a roller mill (crushing, not grinding) might work, with the spacing set right.
But easier to just buy them split. Middle eastern grocers sell split fava beans, which make great tempeh. Soak quickly, cook quickly, ferment well.
You can get split chickpeas (chana dal) and split mung beans (moong dal) from most Asian grocers, especially Indian but really most Asian grocers have them. Even my local mega-supermarket (Coles) has them. I love mung bean tempeh!
Indian grocers also sell urad, a little bean used for making dosa and idli. You can easily find split urad (urad dal), but better for tempeh is whole urad with the skin removed (urad gota). Very tasty tempeh!

Ricetta semplicissima: cipolla e zenzero tritati molto fini e soffritti in padella in olio, e sfumati con salsa di soia e altre salse a piacere, poi si mette il tempeh tagliato a cubetti (ca 1 cm di lato) e si fa rosolare, e verso la fine una bella spolverata di semi di sesamo.
