I've bought a bottle of liquid smoke and I'm going to make my own smoked tofu. I've never used liquid smoke before, but I've surfed the internet for marinade recipes.

I thought liquid smoke would be some strange concoction of unpronounceable chemicals, but the ingredients are water and natural hickory smoke flavor, and it is really made from captured wood smoke.

I have a favorite recipe that calls for smoked tofu, but I haven't made it for over 16 years because Soy Deli had a massive tofu recall in 2007 and shortly afterward, disappeared altogether. As far as I can tell Soy Deli Hickory Baked Tofu was the only smoked tofu ever carried by any of my local stores.

I've tried the recipe with plain tofu, teriyaki tofu, etc., but that hickory-smoked flavor is what made this dish rock.

We started with the Crispy Air Fried Tofu recipe by Sarah Bond at https://www.liveeatlearn.com/crispy-air-fried-tofu/ It was the first recipe we tried when we bought our air fryer. Sadly, I cannot tolerate any alliums, so the first substitution was ginger for the garlic — and that inspired us to add curry powder (I have to mix my own). We discovered through carelessness that a higher temperature and slightly longer cooking time made it tastier (to us anyway).

Finally tried scrambled #JustEgg

I don't recall what chicken eggs taste like so I can't compare.

It lacks the soy aftertaste #tofu scrambles sometimes have, so that's a major plus. (Does anyone know how to get rid of that? Maybe it's the brand I buy...)

But one serving for myself and over half the bottle is gone. Tasty but not economical so I don't think I'll buy again. I aim for #WFPB most of the time anyway, I treat these substitutes as novelties.
