i made the spicy chicken and split-pea tray bake from this for the first time tonight and it was dead easy - including cutting up a whole chicken. i wasn't exactly sure what to do with the orange quarters so i squeezed one of them into the marinade, and used habaneros. delicious. the shallots and garlic were mushy perfect - next time i'm doubling those and adding something like beetroot or potato.
