Today mega wine tasting session at Tinglado1 #Tarragona was a bit of a mixed bag and also proof that Catalan D.O's are becoming a hindrance, stifling innovation and promoting average.
One of several exceptions was a great #Trepat by Josep Foraster, light and easy with a soft balanced acidity and a salty caramel finale. Also notable were the wines by bodega La Gravera from the remote Serra Larga, that produces highly aromatic both classic and natural wines from obscure varieties like Trobat Blanc, Pansa de la Noguera, and Isage, and definitely deserves a closer look.

Known here as Método #Ancestral the technique was accidentally invented by a monk in the XVI century in Limoux, France and is the oldest known way of producing sparkling wines and also the more natural because there is no need to add sugar to start off a second fermentation.

The result are far more difficult to control but if done right can be glorious!
