There are few pieces of music that have wormed their way into my mind like Vaughn William's Fantasia on a Theme by Thomas Tallis.

For those of you with Apple Music subscriptions there's a live video of the London Symphony from 2021 that really captures the double orchestras from the scoring, and that the recording engineers took great care to capture in a natural way.
