Every time I cook a pulse for the first time in the #InstantPot I look at timings online, I always put it less time than it says, and somehow the pulses come out all mushy when I looked timing for "cooked but whole , ideal for salads". It's tiresome .

Tonight I made my first vegan “cheese” sauce without cashews or pre-packaged vegan cheese shreds. It was made into a cheese and broccoli bake with noodles. I was disappointed with the mac and cheese sauce made from the shred a few days earlier, so I tried this way, with the main component made from puréed pumpkin! It turned out really tasty, I just need to add a little more salt next time (I habitually undersalt, so it’s an easy fix). #vegan #vegancooking #food

Today's dinner: stuffed courgette flowers.
I used pea protein mince, mixed with minced onions & garlic& some fresh basil, & seasoned with salt & pepper. The courgettes were then sprayed with oil & baked for 20 mins in a 180C convection oven.
They were served alongside roasted potatoes (peeled, cubed, olive oil, salt & pepper, 30 mins in the oven) and some extra courgette.
The difference in flavour between the two types of courgettes (our CSA farmer told us they were different) was remarkable.

Vanavond genoten van een vegan kaasfondue van Sheese. Deze heb ik meegenomen uit Brighton - hoe kon ik ze ook laten liggen. Het ene bakje kaasfondue is met lenteui en knoflook, de andere met jalapeno en chili. This has been a go-to for me and my partner for years. We call it summer salad because we eat it constantly in the warmer months, but I've seen variations on it referred to as "cowboy caviar." All ingredients below get put into a big bowl and mixed up. This makes enough for two people to have several portions each.
🌱 2 cans black beans, drained and rinsed
🌱 1 can corn, drained and rinsed
🌱 1 bunch cilantro, chopped
🌱 2 spicy peppers, seeded and chopped (we tend to use hungarian wax peppers because they're available locally, but jalapeno is what you'll see most frequently in similar recipes)
🌱 around 1/3 of a red onion, chopped
🌱 around 16 ounces small tomatoes (cherry, grape, etc), cut in halves or quarters
🌱 2-3 tsp cumin
🌱 2-3 tsp garlic powder (you can also use 1-3 cloves of minced garlic, if you would rather)
🌱 2-3 tsp paprika
🌱 1-2 tbsp lime juice
🌱 1 tsp salt
(Cumin, garlic, paprika, lime, and salt are all guesstimates--do what you like! I've sometimes also used ancho chile powder and/or oregano.)
You could also add avocado, bell pepper, tomatillo, roasted sweet potato, green onion, or whatever else. I like to put hot sauce on my portion. Recipes found by searching for "cowboy caviar" frequently include a dressing, if you're looking to add more fat/flavor. We've sometimes sauteed the tomatoes and red onion in a pan with some neutral oil before adding them to the bowl and that's lovely as well.
A nice thing about making a big bowl of this is that its pretty versatile: it goes with chips, it goes with rice, it can become burrito or wrap ingredients, it can be combined with tofu, seitan, or another protein, and so on. I love this recipe. It's relatively cheap, it comes together super quick, and it's really bright and delicious.
