Missing the #sunshine of #Goa, we found this little #restaurant #gem for a cheeky #lunch on our way home from #Birmingham. A fusion of #Portuguese and #Goan #cuisine. Not exactly the same #Pork #Vindalho taste as a couple of weeks ago, but a delicious #vinegar #sour #taste than burning #chilli. The #homemade #Kulfi was different!

Filipino Adobo and Indian (Goan) Vindaloo are beloved dishes around the world. Both of these preparations originated in the Iberian region. They spread with the Spanish and the Portuguese people, eventually admixing with local inspirations in Philipines and India, and adopted regional ingredients before reaching their current forms!

The #tofu #vindaloo was a hit!
Interesting fact: “vindaloo” is a local pronunciation of a #Portuguese dish that translates as “meat in a garlic marinade.” Vindaloo originated in Goa, once a Portuguese colony and now a state in SW India. Goans substituted palm vinegar for the Portuguese red wine and added Kashmiri chillies (which aren’t from Kashmir!), ginger, and other spices. And since tofu originates in East Asia, tofu vindaloo is a truly global dish!

Pork shoulder been marinating for 5 hours in red wine vinegar, garlic, ginger & spices. Now on simmer for a couple of hours. I’ll add a dollop of yoghurt near the end to balance the sharpness👊🏼 #vindaloo #curry #homecooking #saturday
