I wondered what those viral TikTok smashed potatoes were like. Answer: freaking spectacular. Makes sense: flattening the par-boiled potato and LEAVING IT on a hot baking sheet = gloriously crisp flat side and crunchy ruffled top side. I whipped up avocados, spinach, basil, garlic, lemon and olive oil as a dip. Good decision.
