Other room members can create local addresses on the homeserver they use, and these too can be published as ways of addressing the same room.
Room history is a bit more complicated. But every homeserver has a history from the time a person using it joined, and complete histories can be synced using the protocol.

The group found each other through the fediverse in 2019, and ran 5 group testing sessions on different voice/ video chat apps (a curious synchronicity that realtime conferencing became so critical in 2020).

Sure, but it works just fine. At least it did last time it was tested by the VOICE group (#voicechat:matrix.org run group tests of Free Code voice chat apps, new testers welcome!)

AFAIK 1:1 calls are now 100% native matrix. Native conference calls (without Jitsi) have been in beta since early last year:
