Best to eat:

Less meat & dairy.

Fewer nuts - you also have to suffer their fats yet their micronutrients are available in healthier foods.

Less rice - bad for monocultures/biodiversity. Vary your grains for biodiversity and a full complement of amino acids if a plant-based diet.

For the switched-on, water extraction is one of many problems, but the pattern for meat and dairy versus plants is similar across fertilisers, land use, pollution, etc.
