One of my favourite breads is a Cider Bread from #KitchenDiariesII by #NigelSlater.
It's a combo of bread flour and spelt flour, mixed with milk, honey and dry cider. The cider gives it a slight sour-dough taste.
It is probably accidental but it is a variation on Normandy's Cider Bread which is made with a mix of flour including rye flour.
I really recommend Nigel's bread if you have the book.
