May as well show where the idea of the pork al pastor bowl came from. I figured I had 4 of 9 ingredients on hand so I improvised. But if I plan ahead next time maybe it will look like this. Tomatoes, cilantro, pineapple and drizzled avocado dressing would make it spectacular. #WhatsForLunch

I’d gotten the marinated pork about $2/ pound and didn’t know what to do with it since I haven’t gotten the hang of homemade tacos yet. Added rice, Southwestern spicy beans and cheddar cheese on top. Yummy! #WhatsForLunch #cooking
