It will depend somewhat on the bean used. I used navy beans, which were tender but not squishy. For the next batch (tomorrow) I got Great Northern beans, and I imagine those will be quite tender.
My favorite white bean is Corona, a runner bean, and that is tender enough to be somewhat squishy. In the US, you can order those from Purcell Mountain Farm or Rancho Gordo.
