It's Friday, which means it's time for a loaf of homemade bread! After taking a class throughout 2022, I've finally gotten quite good at Rustic French boules (French for "ball"), so my goal this year is to make a loaf once a week and forever give up horrible processed store-bought bread. To remind you, I use white-berry whole wheat "artisan flour" that's more delicate but more expensive than commercial flour.

@mshawkanddove The single biggest surprise this year is that if you use the more delicate #whiteberry flour from #artisan #mills (99% of commercial bread is made from the hardier and cheaper but heavier and grosser red berry strain of wheat), you can basically make whole-wheat bread that's as light and fluffy as white bread. That's exclusively what I bake with now, mostly with the #KingArthur version since I can buy it at my neighborhood Whole Foods instead of mail-order.

I've been doing a self-designed #breadmaking #class all year that I was previously chronicling at Instagram and now here. Today I decided to make #kaiser #rolls for the second time, using the #whiteberry #wholewheat #artisan #flour I permanently switched to this summer. This time I was more aware that the rolls maintain the shape you make during the shaping process, even through the proofing and baking, so this time I tried to shape them more "roll-looking."
