It's an organic RiverJohn Blue, grown by a local farmer and bought from the Wolfville Farmer"s Market to Go (www.wfm2go.ca). Blue potatoes are full of anthocyanins, just like blueberries. So good for you and delicious, too.

Batch of tempeh finished in 18 hours.
I start mine in the oven where the light has been on for a few hours. That's warm enough and cost me nothing. Then I steamed it all for 10 minutes to stop the culture.

Today cook is busy, so lunch is leftover soup with the added bonus of air fried potato wedges. I just toss them in a little tamari or soy sauce, then with onion and garlic powder, paprika and cayenne to taste. 20 mins in the fryer. This comfort food is quickly prepared and free of oil.

Even better, go vegan but also skip refined food (refined sugar, things made with refined flour, fruit juice, etc.) and also highly processed food manufactured using industrial methods.
