My partner, who's a wizard in the kitchen, just made these scrumptious -looking #muffins. He made them from #zucchinis grown in his own garden, #lupin flour, #walnuts, #pecans, #chocolate chips, #allulose, and olive oil.
While these cool off, he's preparing a homemade #quiche.
I am so spoiled.
It's a good thing I've already done 5,000 jump rope jumps today. It's not easy being thin and fabulous living with such an excellent, enthusiastic cook.

- half each yellow and green #zucchinis, slice thinly (easy to do with the slicer side of a cheese grater)
- a zucchini's worth of red #cabbage
- some #greens, chopped. such as: arugula, basil, cilantro
- some #garlic, crushed. I used 5 cloves for budget but I could have used 5 heads and that would have been so good.
- some salt (I added sauerkraut juice)
- some sour (I dumped in the last of the lime juice)

HERE ON THE COAST…
We have a serious zuchini glut in our garden. Just two plants are producing up to four zicchinis a day.
The question is what do we do with so many zucchinis? Our neighbour grows them so we cannot simply give them away. My partner is experimenting with zucchini recipes. What we are also doing is shredding the zucchinis and drying them in our electric dehydrator. That way, we van use them over the coming winter.
Ideas?
